POINT-OF-SALE SYSTEMS
T he point-of-sale system has long been the nerve center of a restaurant, managing every order and capturing a treasure trove of data along the way. As restaurant operations grew more complex in recent years, the POS followed suit. What once may have been just a few shared terminals has in many cases blossomed into a connected network of handheld devices, self-service ordering, linked third-party platforms, and real-time business intelligence tools. Today’s POS systems not only enable fast, flexible order management from multiple channels, but they also unlock the power of that transaction data — including sales mix, channel volume and customer behaviors — to optimize operations and improve guest experience. Yet even as POS capabilities have exploded, many restaurants are using older systems — only about a quarter of operators have replaced their systems in the last two years — and increasingly are grappling with the challenge of integrating their POS with the rest of the tech stack. About 1 in 5 operators cite poor POS integration as a top challenge, in recent Nation’s Restaurant News and Restaurant Business research. While the majority of operators surveyed say they are broadly satisfied with their current systems it remains a core target for near-term investment. In fact, more than half of operators in the 2026 Restaurant Technology Outlook survey by Nation’s Restaurant News and Restaurant Business said they were planning to invest in their POS capabilities, up from 40% a year earlier.

Hear his projections for nontraditional retail opportunities powered by new tech, as well.
Fighting Fragmentation: Hannah Arner, director of restaurant digital and technology capabilities for The Coca-Cola Company, advises foodservice operators to focus on integration of their tech stacks so that their disparate solutions share data and optimize a brand’s strategies. Winning or- ganizations may not necessarily offer every new piece of technology, but they will have the most connected ecosystem behind the ordering channels and marketing tools they do have.
Embracing Failure: Juan George, co-founder of 858 Partners, shares how admitting what we don’t know — and forging ahead anyway — is the key to building a culture of innovation. Restaurants should be constantly trying new ideas and get- ting comfortable with uncertainty to drive real change in their businesses.

CUSTOMER EXPERIENCE
T echnology that streamlines operators and improves the customer experience is table stakes for restaurant operators, and nearly 9 in 10 say they plan to invest in new technology in the coming year — a figure that has held steady in our surveys for three years running. But figuring out how present technology should be for the guest is a balance restaurants are still sorting out. Creating memorable experiences increasingly de- pends on technology that enhances rather than replaces human hospitality. From reservation management, AI-assisted ordering and phone an- swering, self-service ordering and post-visit en- gagement, customer experience technology aims to reduce friction, personalize interactions, and give staff more time to focus on genuine guest connec- tions. Where and how AI fits into the equation is another question operators are grappling with, as they simultaneously look to adopt new AI capabilities while preserving the human element of hospitality. The vast majority of operators in our surveys said they’re increasing investment in AI this year, even as nearly four in 10 said they’re seeing guest resist- ance to customer-facing AI. The most successful implementations balance technological efficiency with human warmth, using tools to eliminate operational pain points, boost staff productivity, and augment the authentic hos- pitality that keeps guests coming back.

Invisible, Yet Innovative Tech: Hannah Arner, dir- ector of restaurant digital and technology capabil- ities for The Coca-Cola Company, says today’s foodservice consumer is looking for more con- venient ways to engage with restaurants, but they expect much of the technology powering modern strategies to work behind the scenes. “Invisible” use cases include AI-powered demand fore- casting and data-driven loyalty that leads to greater personalization.
The Rise of Robotics: Juan George, co-founder of 858 Partners, says he expects a surge of activity around robotics in the next year, both for com- panies and for consumers. As consumers become more comfortable with robotics in their own lives, they’ll expect that kind of efficiency from the busi - nesses they patronize. The time for restaurants to start testing automation, he says, is now.
Consumers Shift Their Expectations for Tech: Rob Grimes, founder and CEO of the International Food and Beverage Technology Association, explains how restaurant customers have turned the tables on technology in the foodservice industry, often using their own devices to engage with brands in new ways and to order in ways that are more convenient. BACK-OF-HOUSE TECH
T The restaurant kitchen is undergoing dra- matic transformation as operators — faced with persistent labor shortages, rising food costs, and razor-thin margins — turn to technology to optimize back-of-house operations. Amid rising food and labor costs, the back-of-house has become ground zero for operational innovation, and oper- ators are increasingly turning their focus toward tools that may be invisible to the customer but no doubt impact the consistency and quality of the hospitality they receive. There is no shortage of new tools reshaping oper- ations, including kitchen robotics and automation, AI-driven demand forecasting and inventory opti- mization, smart cooking equipment with precision controls, labor management tools, and integrated kitchen management platforms. As operators face growing pressure to demonstrate ROI of their technology investments, back-of-house tech that can demonstrate measurable impact on food costs, waste, labor hours, throughput, and more, are gaining traction.
